Chocho Falafel

Traditional falafel are an amazing blend of herbs, spices, and chickpeas deep fried to perfection, served stuffed deep inside a fluffy pita with all sorts of pickled vegetables, tomato and cucumber salad, and lots of tahini. As delicious as these traditional falafels are, they can be complex for the home chef to master-- especially those without a deep fryer (aka most of us).

Enter our Chocho Falafel, a healthier, protein packed, and less fried version of a fan favorite. Made with falafel staples like chickpeas, parsley, cilantro and cumin with a sneaky extra 27 grams of protein per serving from Mikuna Chocho Superfood Protein Original, these falafel are truly an upgrade. Instead of frying these babes, we sear them in a pan and finish them off in the oven, reducing the hassle and the heaviness of traditional falafel. Serve your Chocho Falafel stuffed inside a pita with chocho Garlic Crema and a dollop of hummus, on a salad with Chocho Chipotle, or by themselves, they are that good. 


INGREDIENTS//

  • 2 ¼ cup chickpeas
  • 1 ¼ cup parsley 
  • 3 cloves garlic
  • 2 medium shallots
  • ½ cup Mikuna Chocho Superfood Protein Original 
  • 1 ½ tsp cumin
  • ¼ tsp salt
  • 1 ¼ cup cilantro
  • 4 ½ tbsp olive oil
  • Zest of one orange
  • Olive oil to cook

METHOD//

  1. Preheat oven to 350º Fahrenheit
  2. Place everything in a food processor and pulse until well combined
  3. The mixture should malleable enough to form into patties
  4. Form into about 1 ½ inch patties
  5. Heat olive oil in a skillet over medium heat
  6. Put patties on skillet and sear each side for a couple of minutes
  7. Finish in the oven for 7 minutes
